Our oysters begin their lives in the tidal flats of Crowes Pasture Beach in East Dennis, Massachusetts, where the Quivett Creek and Cape Cod Bay meet. These flats are one of the few protected marine nurseries in the state. Named for their tear-drop shape, a bite into one of our oysters gives a burst of salty ocean initially that mellows to sweet vegetable notes with a hint of cream. Hearty meat and a firm texture round out the perfect experience. ***
The confluence of the Rappahannock River and the Chesapeake Bay is a unique place to raise oysters. Farmed near the mouth of the Rappahannock, where the full force of the river meets the Chesapeake Bay, the mineral-rich freshwater is unmistakable and infuses our River Pearls with sweet notes and low salinity. Paired with an effervescent wine or caviar, a richer experience cannot be found.
